PO 433/533 – Poultry Processing and Products, 3 credits, Fall semester Class description – 2 lectures, 1 laboratory per week Covering all aspects of poultry meat and egg processing, including the science of muscle biology, anatomy, meat science, and microbiology. Also includes the business and practice of processing with management and economic sections.
Food Industry Tour, 2 credits Conducted during Spring Break, 5 wonderful days in a van touring numerous food processing plants across the US
